Quick Oven-Baked Salmon
Serves: 2
INGREDIENTS:
- 300 g salmon fillet
- 400 g frozen veg mix (peas, carrot, cauliflower, peppers)
- 200 g natural quark (0.2% fat)
- 2 tsp fish stock
- 2 lemon wedge
- 2 tbsp fresh dill
- Salt & pepper
METHOD:
- Preheat oven to 200°C.
- Place salmon and veg in a baking dish.
- Bake 15–20 minutes until cooked through.
- Mix quark with stock, dill, and lemon juice for sauce.
- Serve salmon and veg with sauce.
