Quinoa salad with soybeans and feta cheese

Vibrant quinoa salad with soybeans

Refresh yourself with this vibrant quinoa salad featuring protein-packed soybeans and tangy feta cheese. Bursting with freshness and flavour, this salad is a delicious way to enjoy a nutritious meal.

Ingredients - 4 servings

200 ml uncooked quinoa (180 g)  

1 cube vegetable stock  

250 g frozen soybeans  

100 g fresh baby spinach  

15-20 cherry tomatoes  

1 avocado  

3 tbsp dried cranberries  

2 tbsp pumpkin seeds  

100 g feta cheese  

1 tbsp olive oil  

2 tbsp crema di balsamico

Carbohydrates 41 g  

Fat 29 g  

Method - 20 minutes

  1. Boil the quinoa together with the vegetable stock.
  2. Mix in the frozen soybeans with the quinoa so that the beans thaw.
  3. Cut the tomatoes and avocado into pieces.
  4. Mix the quinoa with the baby spinach, tomatoes, and avocado.
  5. Mix in the cranberries and pumpkin seeds. Pour in 1 tbsp of olive oil and stir.
  6. Serve the salad on a large plate. Crumble the feta cheese and drizzle the crema di balsamico on top.
