Ingredients - 4 servings
200 ml uncooked quinoa (180 g)
1 cube vegetable stock
250 g frozen soybeans
100 g fresh baby spinach
15-20 cherry tomatoes
1 avocado
3 tbsp dried cranberries
2 tbsp pumpkin seeds
100 g feta cheese
1 tbsp olive oil
2 tbsp crema di balsamico

Method - 20 minutes
- Boil the quinoa together with the vegetable stock.
- Mix in the frozen soybeans with the quinoa so that the beans thaw.
- Cut the tomatoes and avocado into pieces.
- Mix the quinoa with the baby spinach, tomatoes, and avocado.
- Mix in the cranberries and pumpkin seeds. Pour in 1 tbsp of olive oil and stir.
- Serve the salad on a large plate. Crumble the feta cheese and drizzle the crema di balsamico on top.
