By Gemma Collins and Tristan Welch

Bright, wholesome, and bursting with flavour, this Green Shakshuka is a vibrant twist on the Middle Eastern classic. Packed with greens, protein-rich edamame, and creamy feta, it’s a dish that brings comfort and freshness to the table in just 25 minutes. The aromatic blend of cumin and coriander infuses every bite with warmth, while the soft, runny eggs and tangy Greek yogurt create a luscious contrast.

Perfect for a lazy weekend brunch or a quick, nourishing dinner, this shakshuka proves that eating green can be both indulgent and satisfying. Gemma and Tristan’s version celebrates simple ingredients elevated with flair—delicious proof that healthy food never has to be boring.
