Lentil and sweet potato soup

Hearty lentil sweet potato soup

Warm up from the inside out with this hearty lentil and sweet potato soup. Packed with nutritious ingredients and comforting spices, this soul-soothing soup is perfect for chilly days and busy weeknights alike.

Ingredients - 6 servings

400 ml red lentils (dried)   

2 cans light coconut milk (7%)

600 ml water

1 yellow onion   

2-3 garlic cloves

400 g sweet potato  

4 carrots  

1 cube vegetable stock  

3 tsp ground ginger  

3 tbsp lemon juice  

salt/pepper

Method - 30 minutes

  1. Peel and chop the onion and garlic. Peel and cut the sweet potato and carrot into small pieces.
  2. Heat up a large pot and sauté the onion/garlic in a little oil for a few minutes.
  3. Add the sweet potato, carrot, water, coconut milk, stock cube, red lentils, ginger, and lemon juice.
  4. Cook for about 20 minutes, until the sweet potato and carrot are completely soft.
  5. Blend the soup until smooth. Add a little more water if the consistency feels too thick. Season with salt and pepper, and possibly a little more ginger and lemon.
  6. Serve the soup with a crispbread with a protein-rich topping.
